Schokolade
Artisan Chocolates are produced in small quantities with fresh
ingredients with very little or no mechanized equipment.
Our
Chocolatier uses ganache, made from local dairy cream, chocolate,
and pure fruit juice. This offers tremendous freedom in using any
flavour combinations, ingredients, or decorating techniques.
Chocolates at our store have an average shelf life of 1-3
month depending on the variety you choose.
At
Schokolade we strive to use 70% couverture in our creations
(couverture is the term used for high quality chocolate used for
dipping and enrobing, containing a minimum of 56% cocoa
content.) The percentage number refers to the amount of cocoa
bean used in the couverture. Thus our 70% dark contains 70%
of the natural goodness and flavor of the cocoa bean. Couvertures
and chocolates with lower percentages will contain accordingly
higher percentages of sugar and lower percentages of cocoa content.
